Butter Tarts

This is a recipe from Rob’s mom. Butter Tarts are a Canadian treat, and I try to make these any year we will not be spending the Christmas holidays with her to keep Rob in touch with his Canadian roots!

Recipe

makes approximately 1 dozen

2 eggs
1 cup white sugar
1 cup raisins
1 tsp vanilla
1/3 cup butter
4 Tbl heavy cream

Beat eggs and combine with remaining ingredients. Gently boil over medium heat 3 minutes, stirring to prevent burning. Fill unbaked pastry tart shells* about 3/4 full. Bake at 375 for about 12-15 minutes.

* I use rolls of pre-made pastry dough. I spray muffin tins with Pam then cut circles that will come up about 3/4 of the way up the muffin cup and mold it into the cup best I can. 2 premade crusts = 19 muffin tin size crusts

Loving God, as children at Christmas time it was hard to be patient… to open gifts and to await the visit from Santa. Help us to be patient as the coming of the Lord is nearer. In Christ’s name, we pray. Amen.
