Cranberry Christmas Salad
This was a favorite from Grandma. The adults really liked it – the children hid their square of salad under the lettuce leaf that Grandma always placed on each plate, chopping it up a bit so Grandma would think that they had eaten some. As the children grew older, they did admit that it was better than they thought. As our family has grown into many adults, they find it fun to tell their children and grandchildren what Mom and Dad did with Grandma’s Christmas salad. Today I find that I need to make a double batch. It’s really very good and good for us too.
Recipe
2 pkg lemon Jell-O
1 pkg orange Jell-O
1 12 oz pkg cranberries – ground
1 1/2 cup celery – chopped
1 cup walnuts – chopped
1 15 oz can crushed pineapple
Combine all ingredients and pour into a 9×13 Pyrex dish and refrigerate.
