SWEDISH OVEN PANCAKE (UGNSPANNKAKA)

On Christmas morning after we opened presents, we had a special breakfast of oven pancakes. This became a yearly tradition in our home because of my husband’s Swedish heritage. Now when the family comes to visit they want an oven pancake for breakfast any time of year.

Recipe

6 eggs
4 cups of milk
1/3 cup sugar
1/4 cup butter
1 cup flour
1 teaspoon vanilla

Beat eggs until light, beat in sugar. Add flour and beat until smooth Gradually add milk. Add vanilla. Let stand 1 hour.

Melt butter in a 9×13 inch baking pan. Spray the sides of the pan with cooking spray. Pour the batter into the hot pan.

Bake in a hot oven (425) 45-50 minutes. Pancake will puff up, but will go down when removed from the oven. Serve immediately with more butter and maple syrup. For a special treat, try lingonberries.
