2 16 oz. packages of frozen broccoli florets
(Note fresh can be used but needs to be cooked to some degree of tenderness.)
2 eggs beaten
1 small onion chopped fine
1 can Cream of Mushroom Soup
1/2 cup mayonnaise
1 cup grated cheddar cheese (I add extra)
1 package herb stuffing mix (Pepperidge Farm)
1/4 cup melted butter
Preheat oven to 350.
Cook broccoli according to package directions.
Combine eggs, onion, soup and mayonnaise.
Place a layer of broccoli in a greased 2-quart casserole dish.
Add layer of cheese. Pour small amount of sauce on top.
Repeat layers until all are used.
Top with stuffing mix and drizzle on melted butter.
Bake for 30 minutes in preheated oven.
